Light Fruit Dessert
[one of Martha’s personal recipes]
graham crackers
bananas
strawberries
1 large package sugar free vanilla pudding
1 (16 ounce) can crushed pineapple
1 (16 ounce) tub of Cool Whip

Drain crushed pineapple. Line an 11 x 9 x 2 inch pan with graham crackers. Mix pudding as directed on box. Pour pudding over graham crackers. Spread drained pineapple over pudding. Slice bananas, cover pineapple. Slice strawberries, cover bananas. Cover with Cool Whip. Keep refrigerated.

Orange Pie
[Martha’s mother, Velvie, created this recipe. They lived by an orange grove, and Martha’s mother would create special recipes from the available seasonal fruit. “Key limes were hard to come by so Mama would make do with oranges. I’ve learned to love her orange pie recipe--even more than any key lime pie,” notes Martha.]

9 inch pie crust, baked
3 cups orange juice
4 eggs, separated

1 ¼ cup sugar
3 heaping tablespoons flour
3 tablespoons butter

Use double boiler for best cooking results. Mix orange juice, egg yolks, sugar, flour and butter in pat and cook until thick. Pour into baked pie crust. Top with meringue (see recipe below) or when filling cools, top with Cool Whip.

Meringue topping
4 egg whites 4 tablespoons sugar	¼ teaspoon vanilla
Beat egg whites, sugar and vanilla on high speed till reach peaks. Put on top of pie and brown on low heat in oven.
